KYRAN TOMPKINS


Kyran Tompkins has spent more than a decade working in hospitality and beverage production, managing several distilleries throughout the Hudson Valley and greater New York area before founding Wiltwyck Spirits Company in 2022.

As founder and distiller, Kyran stays closely involved in every part of what Wiltwyck makes, from developing recipes to overseeing production. Earlier in his career, he produced a gold medal winning vodka using an unconventional distillation method, reflecting a hands on and thoughtful approach to the craft. At Wiltwyck, that same mindset guides everything we make. The goal is clean, well made spirits and ready to drink cocktails that are consistent, approachable, and genuinely enjoyable.

Much of Kyran’s work happens behind the scenes, refining formulas, improving processes, and solving the practical challenges that come with making beverages at scale. His focus is on getting the fundamentals right: balanced flavor, reliable quality, and products that work just as well in a busy bar as they do at home. That attention to detail shapes not just how Wiltwyck’s spirits taste, but how they fit naturally into the way people actually drink.

JONATHAN NILES


Jonathan Niles has carried a strong sense of responsibility and independence from an early age, often described as an “old soul” with a natural instinct to take care of the people around him. That mindset led him to volunteer as a junior firefighter in high school and shaped a lifelong commitment to service, resilience, and community.

His career has spanned kitchens, skilled trades, finance, and small business operations — experiences that built a practical understanding of hard work, accountability, and craftsmanship. Each role reinforced the value of showing up, doing things the right way, and supporting the people beside you.

As co-founder, CFO, and managing member of Wiltwyck Spirits Company, Jon oversees the operational and financial backbone of the business while remaining hands-on wherever needed, including behind the bar. In 2022, he partnered with his brother-in-law to launch Wiltwyck, restoring their Kingston space by hand alongside family.

Jon’s approach to Wiltwyck reflects the same principles that shaped him early on: steady leadership, disciplined execution, and a belief that the strongest foundations — whether in business or in life — are built through care, effort, and community.
